Let’s begin – in the beginning

The typical cooking vessel used in India is the Kadai, the cast iron at the best to cook with I have had a difficult time finding cast iron but mainly there are stainless steel.

The Kadai is able to withstand intense heat, Indian cooking is done with high heat. Those are the first secrets to cooking Indian food. I previously made Indian food at home but once I came here I realized that’s way it never tasted quite right, ha.
